Vin de Paille roughly translates to 'straw wine', a common style of sweet wine made in the old world by drying grapes laid out on straw. Paul Pujol makes his from Pinot Gris, harvested at the same time as his Prophet's Rock Pinot Gris, the grapes are then laid out in the winery for drying. Only 763 half-litre bottles were ever made, and the wine is a medium sweet and extremely rich take on the grape. We think it's more of a cheeseboard or aperitif wine than a dessert wine, with its lovely, honeyed fig and apple flavours. One of the only Vin de Paille in NZ, it's a collector's item that will cellar beautifully.
